Pasta Salad with Avocado Dressing

Another tasty salad recipe. I used my favourite lentil pasta for this salad but you can use whatever type of pasta you have available. Avocado makes a lovely creamy dressing!

Ingredients

about 100g pasta of your choice

2 spring onions chopped

1 pepper chopped (I used a red pepper but you can use any colour pepper)

about a handful of fresh basil chopped

flesh of 1 avocado

juice of half a lemon

1 tablespoon olive oil

Step 1: Cook pasta according to packet instructions. When it is cooked rinse with cold water.

Step 2: Put pasta in salad bowl along with spring onion, pepper and basil.

Step 3: To make dressing put avocado, lemon juice and olive oil in nutri bullet (or alternative blender). Blend until smooth.

Step 4: Pour dressing over salad and mix everything together well. Then you can eat!

Colourful Chickpea Salad

I made this colourful chickpea salad yesterday. It is the same recipe as the colourful quinoa salad I made a few days ago. I just replaced quinoa with a tin of chickpeas. It is very tasty as well and even easier to make because you don’t need to cook anything. Just throw all the ingredients together in a salad bowl!

Colourful Quinoa Salad

A very colourful, nutritious, tasty salad.

Ingredients

1 cup quinoa

3 cups water

seeds of 1 pomegranate

2 spring onions chopped

about a third of a cucumber chopped

1 pepper chopped (I used a red pepper but you could use any colour pepper)

about a handful of fresh mint chopped

juice of half a lemon

1 tablespoon olive oil

Step 1: Put quinoa and water in a saucepan. Bring to the boil, then simmer until all the water is absorbed (about 15 minutes). Allow to cool.

Step 2: Put cooked quinoa in salad bowl along with pomegranate seeds, spring onion, cucumber, pepper and mint.

Step 3: To make salad dressing mix lemon juice with olive oil. Pour over salad and mix everything together well.

Step 4: Enjoy this salad as part of your lunch or dinner. I had some for lunch today with the black bean sweet potato falafel I made yesterday.
