Homemade Pizza

I recently discovered sourdough pizza bases in Aldi and I have been enjoying making pizza with them using different toppings. Here are some I have made:

Toppings: passata, mozzarella cheese, spinach, yellow pepper, basil
Toppings: pesto, mozzarella cheese, spinach, roasted butternut squash, basil
Toppings: olive oil, garlic, basil, cheddar cheese, spinach, walnuts
Toppings: hummus, basil, spinach, red pepper. mixed seeds

Baked Porridge

I made this baked porridge for breakfast today. It was delicious!

I made it with 1 cup porridge oats, 1 cup almond milk, 1 cup mixed berries, 1 chopped banana and a little bit of ground cinnamon. I just put everything in a baking dish, mixed together and baked in oven for 20 minutes @180 c. So easy!

I used almond milk but you could use any type of milk.

I used frozen mixed berries but you could also use fresh berries. Frozen berries are handy to have in the freezer these days.

You could also try making it with other fruit like apple or pear.

This recipe makes 2 servings. If you have some leftover you can reheat it the next day.

Red Cabbage and Apple

I will be making this again this year for Christmas dinner. Always tastes so good!

1 tablespoon olive oil

1 onion chopped

about 500g red cabbage roughly shredded (I used my hands to shred it)

2 apples peeled and chopped

3 tablespoons balsamic vinegar

2 tablespoons brown sugar

1 handful dried cranberries and cashew nuts (optional)

wp-1513262913574..jpg Step 1: Heat olive oil in a saucepan and cook onion for 2-3 minutes. 

wp-1513262917634..jpg Step 2: Add in red cabbage, apple, balsamic vinegar and brown sugar. Stir well. Cover and cook on a low heat for 25-30 minutes, stirring occasionally. Add in dried cranberries and cashew nuts if using.

Porridge Bread

Porridge bread was my first blog recipe. It is still one of my favourite recipes and I make it all the time. It is so simple: You just need 3 basic ingredients (natural yogurt, porridge oats and bread soda). Then you can add extra ingredients of your choice such as chopped dates, seeds, banana, etc.

500g carton of Natural Yogurt

Porridge Oats

Bread soda

dates (optional)

seeds such as chia, linseed, sesame (optional)

img_20170207_122046 Step 1: Empty 500g container of natural yogurt into mixing bowl

img_20170207_122140 Step 2: Use empty yogurt container to measure two containers full of porridge oats. Add to mixing bowl

img_20170207_122242 Step 3: Add 1 teaspoon of bread soda to the mixing bowl. Mix everything together.

img_20170207_122455 Step 4: Chop 8-10 dates if using. Add to mixture.

img_20170207_122910 Step 7: Put mixture into bread loaf tin lined with parchment paper. Bake in oven preheated to 180 c for 40 minutes
